Smash Burgers with Cheese Recipe
Pair with our 2021 Columbia Gorge Syrah
Ingredients:
– 1 lb (450 g) ground beef (80/20 beef-to-fat ratio works best)
– 4 slices of American cheese
– 4 burger buns
– Salt and pepper (to taste)
– Butter
– Vegetable oil
– Optional toppings: lettuce, tomato, pickles, onions, ketchup, mustard, mayo
Instructions:
1. Preheat the griddle or skillet: Heat a cast-iron skillet or griddle over medium-high heat for about 5-10 minutes until very hot.
2. Prepare the beef: Divide the ground beef into 4 equal portions (around 4 oz/115 g each). Roll each portion into a loose ball—no need to compact the meat too much.
3. Oil the griddle: Add a thin layer of vegetable oil to the preheated griddle or skillet.
4. Smash the burgers:
– Place one beef ball on the hot griddle.
– Using a sturdy spatula or a burger press, smash the beef ball down immediately, pressing it flat. You want the patty to be thin, about ¼ inch thick.
– Let it cook undisturbed for about 2-3 minutes until the edges become crispy and the patty is well browned.
5. Season and flip: Season the patty with salt and pepper, then flip it over using the spatula. Cook the other side for about 1-2 minutes.
6. Add the cheese: Place a slice of cheese on top of each patty after flipping, allowing it to melt while the burger finishes cooking.
7. Toast the buns: While the burgers are cooking, lightly butter the buns and toast them on the griddle or in a separate pan until golden brown.
8. Assemble the burgers: Place each cheesy patty on the bottom half of a bun. Add your favorite toppings, if desired.
9. Serve: Top with the other half of the bun and serve hot with fries or your favorite side!
