2023 Nusshaus Riesling & Pfefferüsse Cookies

WHY IT WORKS: The 2023 Nusshaus Riesling balances the cookies’ warming spices with vibrant acidity and notes of citrus and stone fruit. Its gentle sweetness lifts the pepper and clove while keeping the finish fresh and lively.

Ingredients:

· 2¼ cups all-purpose flour

· ¾ cup packed brown sugar

· ¼ cup granulated sugar

· ½ cup unsalted butter, softened

· 1 large egg

· ¼ cup honey or molasses

· 1½ tsp ground cinnamon

· 1 tsp ground ginger

· ½ tsp ground cloves

· ½ tsp ground nutmeg

· ¼ tsp ground cardamom

· ¼ tsp finely ground black pepper

· 1 tsp baking soda

· ¼ tsp kosher salt

· ½ cup powdered sugar, for dusting

Preparation

1. In a medium bowl, whisk together flour, baking soda, salt, and all spices. In a separate bowl, cream butter, brown sugar, and granulated sugar until light and fluffy. Beat in egg and honey (or molasses) until smooth. Gradually mix in dry ingredients until a soft dough forms.

2. Cover and refrigerate dough for at least 1 hour to firm.

3. Preheat oven to 350°F (175°C). Line baking sheets with parchment. Roll dough into 1-inch balls and place 2 inches apart.

4. Bake 12–14 minutes, until cookies are set and lightly cracked but still soft inside.

5. Cool slightly, then dust generously with powdered sugar.
