Ingredients:
4 cups arugula
2 ripe peaches, sliced
1/4 cup crumbled goat cheese
1/4 cup toasted almonds
For the vinaigrette:
2 tbsp white wine vinegar
2 tbsp fresh tarragon, finely chopped
1 tbsp honey
1/4 cup olive oil
Salt and pepper to taste
Instructions:
In a large bowl, combine arugula, peaches, goat cheese, and almonds.
In a small bowl, whisk together vinegar, honey, chopped tarragon, olive oil, salt, and pepper.
