Grilled Shrimp Skewers

Ingredients

  • 1 lb (450g) large shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh basil or cilantro (chopped)
  • Salt and pepper, to taste
  • Wooden or metal skewers

Directions

  1. If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill.

  2. In a bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, chopped basil or cilantro, salt, and pepper. Mix well to create a marinade.

  3. Add the peeled and deveined shrimp to the marinade and toss until they are evenly coated. Let the shrimp marinate for about 15-20 minutes to allow the flavors to infuse.

  4. Preheat your grill to medium-high heat.

  5. Thread the marinated shrimp onto the skewers, piercing through the tail and the head end of each shrimp.

  6. Place the shrimp skewers on the preheated grill and cook for 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook the shrimp as they can become rubbery.

  7. Once cooked, remove the shrimp skewers from the grill and transfer them to a serving platter.

  8. Squeeze fresh lemon juice over the grilled shrimp and sprinkle them with additional fresh herbs like basil or cilantro.
